Today, roast chicken is cherished worldwide, with countless regional variations and seasoning styles, making it a beloved dish for both everyday meals and special occasions.

Introduce the ingredients for the roast chicken recipe.
In a plate, add 3 tbsp of seared spice, 1 tbsp of garlic powder, 1 tbsp of onion powder, 1 tbsp of curry powder, 1 tbsp of smoked paprika, 1 tbsp of chicken seasoning, 2 tsp of salt, 1 tsp of hot grinded pepper, and 1 tbsp of ginger powder.
Mix all the spices together until well combined and set aside for later use.
Pat the whole chicken dry to remove excess moisture.
Rub extra virgin olive oil all over the chicken, ensuring it is well coated.
Apply the mixed spices generously all over the chicken, making sure it is fully covered for rich flavor.
Rub additional olive oil over the chicken to keep it moist during roasting.
Tie the chicken legs together with a clean rope.
Cut medium-sized potatoes, add olive oil, and 2 tbsp of the spice mix, then mix until well combined.
Transfer the seasoned potatoes to a clean tray for roasting.
Add fresh thyme and green and red peppers to the tray with the potatoes.
Transfer the whole chicken onto the tray with the seasoned potatoes and vegetables.
Wrap the whole chicken and transfer it to the fridge to marinate for three days.
After three days, remove the chicken from the fridge and show its appearance.
Preheat the oven to 200°C (392°F).
Transfer the marinated chicken to the preheated oven and roast for at least 1 hour and 10 minutes.
Allow the chicken to rest for at least 10 minutes before serving.
