Add more oil if needed, then add half a chopped onion and sauté until almost transparent.

Add fresh squid, cut into pieces, and mix with the onion, seasoning with minced garlic and parsley.

Pour in a small glass of white wine and let it reduce for a few minutes.

Add tomato sauce with paprika, mix, and let it reduce until thickened.

Pour in almost a liter of fish broth, add saffron and a bay leaf, and bring to a boil for about 5 minutes.

After boiling, return the seared grouper and monkfish to the broth, arranging them for presentation.

Lower the heat to medium and add the Catalan picada, mixing it into the broth.

Add clams (or mussels) to the pot and cook everything together for 10 minutes, turning the fish and shellfish occasionally.

After 10 minutes, the dish is ready to serve, ensuring the broth is thick and flavorful.
