Preheat the oven to 425°F (220°C).
Place a cast-iron skillet in the oven to heat.
In a mixing bowl, whisk together eggs, milk, flour, vanilla extract, and salt until smooth.
Carefully remove the hot skillet from the oven and add butter, swirling to coat the bottom.
Pour the batter into the skillet and return it to the oven.
Bake until the pancake puffs up and is golden brown, about 20 minutes.
Remove the skillet from the oven and let it cool slightly.
Dust with powdered sugar and drizzle with lemon juice.
Cut into wedges and serve with fresh fruit and cinnamon.
