2 tbsp cooking oil
1 small onion paste
1 bay leaf
500 gm chicken (boneless small cuts)
1 tsp salt
1 tsp cumin (roasted)
1 tsp coriander
2 tsp ginger paste
1 tsp garlic paste
¼ tsp turmeric
2 tbsp besan/ gram flour
3 cups chicken stock (unsalted)
1 cup coconut milk
salt
1 pack noodles
Cucumbers (thinly sliced)
Roasted peanuts (crushed)
Roasted chili (a pinch)
Fried onions
Green onions (thinly sliced)
Coriander (chopped)
Fried flour roti
Green chili (chopped)

First, drizzle cooking oil into a pan and add onion paste - stir well.

Whilst continuously mixing, add a bay leaf and then place the small cuts of chicken into the pan.

Sprinkle salt and add cumin, coriander, ginger paste and garlic paste over the chicken - mix well.

Mix in turmeric and fry for 7-8 minutes.

Add besan; mix well and then add 3 cups of chicken stock - mix well.

Pour 1 cup of coconut milk, 1 cup of water and a sprinkle of salt into the pan - keep stirring well.

Simmer for 15-20 minutes on low heat.

Using a knife, cut flour roti into small rectangular pieces - fry in oil until golden crispy.

In a separate pan containing water, add salt and boil noodles (cook according to the package instructions).

Take the noodles out and place onto a sieve in order to drain out the water.

Place the noodles onto a plate and add cucumbers, roasted peanuts, roasted chilli, fried onions, fried flour roti, green chili and finally the chicken on top/ all over.
