Heat 1 cup of oil in a pan to cover the bottom.
Add 6 coarsely chopped medium onions and stir.
Cover the pan and cook on high heat for 12 minutes, checking every 2-3 minutes.
Add ginger and garlic paste and cook for another 3-5 minutes until caramelized.
Add fresh tomatoes and the spices: 2 tablespoons coriander, 1.5 tablespoons cumin powder, 1 tablespoon Kashmiri chili powder, 0.5 tablespoon haldi powder, and 0.5 tablespoon salt. Stir well.
Add 350 grams of water and cover the pan, cooking on high heat until tomatoes disintegrate, stirring every few minutes.
Once the tomatoes have dissolved, add more water as needed and maintain high heat, stirring occasionally.
Transfer the mixture to a deeper cooking vessel and add more water to reach about 40% of the volume.
Blend the mixture into a fine paste using a stick blender until it covers a spoon smoothly.
Return to the original pan to heat and stir, then transfer to containers for freezing.
