Paxlava is a beloved dessert in Azerbaijan, often enjoyed during celebrations and special occasions. Its rich layers of phyllo dough, nuts, and honey symbolize hospitality and generosity. While traditional recipes vary, the essence of baklava has spread across the Middle East and beyond, with each region adding its own twist, making it a universal favorite.

Prepare the syrup by boiling 200 g of sugar with 1 cup of water.
Add 0.5 teaspoon of lemon juice to the syrup and let it cool.
Mix 0.5 teaspoon of yeast in 1 cup of warm milk.
In a mixing bowl, combine 5 cups of flour, 1 teaspoon sugar, 0.5 teaspoon salt, 1 packet of vanilla, 2 eggs, 150 g sour cream, and 150 g melted butter to make the dough.
Knead the dough until soft and cover it to rest for half an hour.
Blend 700 g of peeled and roasted nuts until coarsely chopped.
In a bowl, mix the crushed nuts with 400 g of sugar and 1 teaspoon of cardamom.
Divide the dough into 12 pieces, with 10 small and 2 larger pieces.
Grease a baking tray with butter and spread the dough, making it thin and elastic.
Layer the dough in the tray, cutting the edges and greasing each layer.
For the last layer, use dough without nuts, brush with 1 egg yolk, and pierce with a fork.
Decorate the top with walnuts.
Bake in a preheated oven for 50 to 60 minutes.
