750 ml beef broth or water
3/4 teaspoon salt
1/3 teaspoon black pepper
1 teaspoon thyme
2 bay leaves
1 1/2 lb potatoes
1 teaspoon sugar

Season 1 kg beef with 1/2 teaspoon salt and 1/3 teaspoon black pepper.

Heat 3 tablespoons sunflower oil in a large pot over high heat.

Brown the beef for 4 minutes on each side, then remove and set aside.

Add 1 chopped onion, 1 chopped carrot, and 1 chopped celery stalk to the pot, cooking for 5 minutes.

Add 50 grams butter and 5 cloves of minced garlic, cooking for 2 minutes.

Stir in 2 tablespoons flour and mix well.

Pour in 2 cups dry red wine and 750 ml beef broth or water.

Add 3/4 teaspoon salt, 1/3 teaspoon black pepper, 1 teaspoon thyme, and 2 bay leaves.

Bring to a simmer, then cover and cook in the oven at 180C (360F) for 90 minutes.

Add 1 1/2 lb chopped potatoes and 1 teaspoon sugar, then return to the oven for another 90 minutes.
