Alfajores Cookies

Cultural Context

Alfajores have their roots in the Moorish influence on Spanish cuisine, evolving into a beloved treat in Argentina. Traditionally filled with dulce de leche and dusted with powdered sugar or coconut, these cookies symbolize hospitality and celebration. Today, alfajores are enjoyed not only in Argentina but also across Latin America, with many regional variations incorporating different flavors and fillings.

butter

🥗Healthier: coconut oil

💰Cheaper: margarine

Coconut oil provides a dairy-free option while maintaining moisture.

dulce de leche

🥗Healthier: honey

💰Cheaper: store-bought caramel sauce

Honey offers a natural sweetness, while caramel is often more accessible.

1

Leave the butter out for at least an hour to become soft.

2

Add 3 egg yolks to the softened butter and mix until creamy.

3

Add sugar and mix until it dissolves and combines well with the butter and yolks.

4

Add 1 teaspoon of vanilla essence and continue mixing.

5

Switch to a spatula to collect from the sides and incorporate easier sugar in parts.

6

Mix flour, cornstarch, and 1 teaspoon of baking powder together.

7

Sift the flour mixture and integrate it with the butter and egg mixture using a spatula.

8

Knead the dough gently to avoid gluten development, until it becomes a compact dough.

9

Transfer the dough to a flat surface and compact it into a ball, ensuring it is well mixed.

10

Roll out the dough gently with a rolling pin to avoid cracking, to a thickness of about 6 mm.

11

Use a 5 cm diameter cutter to cut out cookie shapes, or a glass of liquor if preferred.

12

Recombine any leftover dough, roll it out again, and cut more shapes until all dough is used.

13

Prepare a baking tray with waxed paper and place the cut cookies on it with some space in between.

14

Preheat the oven to 180°C while cutting the cookies.

15

Bake the cookies for approximately 15 minutes, checking after 10 minutes for doneness.

16

The cookies should be pale white on top and golden underneath.

17

Prepare dulce de leche by boiling condensed milk in a pot for 2 hours over medium heat with plenty of water.

18

Spread a good amount of dulce de leche on top of each cookie, reaching the edges.

19

Roll the edges of the cookies in grated coconut to coat them.

20

Assemble the alfajores by placing two cookies together with dulce de leche in between.
