In a bowl, add 1 cup of all-purpose flour, ¾ cup of cornstarch, 1 tsp of baking powder, and ¼ tsp of kosher salt. Mix well and set aside.

In a mixer’s bowl, combine 1 stick of unsalted butter at room temperature and ½ cup of powdered sugar. Mix on medium speed until light and fluffy, about 3 minutes.

Scrape the bowl down, then add 2 egg yolks and 1 tsp of vanilla extract. Mix again.

Incorporate the dry ingredients into the wet mixture, beating on low speed until the dough comes into a ball.

Pour the dough onto a sheet of plastic wrap, flatten it down into a disc, and place it in the fridge for about 30 minutes to firm up.

Once the dough is firm, preheat the oven to 350°F (175°C).

Lightly flour the working surface, place the dough on top, and roll it out to about ¼ inch thick.

Cut the dough into circles using a cookie cutter that’s about 1 ½ inches in diameter.
