Alfajores Cookies

Cultural Context

Alfajores have their roots in the Moorish influence on Spanish cuisine, evolving into a beloved treat in Argentina. Traditionally filled with dulce de leche and dusted with powdered sugar or coconut, these cookies symbolize hospitality and celebration. Today, alfajores are enjoyed not only in Argentina but also across Latin America, with many regional variations incorporating different flavors and fillings.

butter

🥗Healthier: coconut oil

💰Cheaper: margarine

Coconut oil provides a dairy-free option while maintaining moisture.

dulce de leche

🥗Healthier: honey

💰Cheaper: store-bought caramel sauce

Honey offers a natural sweetness, while caramel is often more accessible.

1

Gather dry ingredients: 1 cup all-purpose flour, 1 and 1/4 cup cornstarch, 1/4 teaspoon salt, and 1 teaspoon baking powder.

2

Sift and whisk the dry ingredients together, then set aside.

3

In a stand mixer, add 3/4 cup unsalted butter and 2/3 cup granulated sugar, mix on high for about three minutes until light and fluffy.

4

Add 1 teaspoon lemon zest and mix again.

5

Separate 3 eggs, adding the yolks one at a time while mixing.

6

Add vanilla extract and mix until smooth.

7

Gradually add the dry ingredients to the butter mixture, mixing on low until just combined.

8

Chill the dough in the refrigerator for 30 to 60 minutes until firm.

9

Roll out the dough on a lightly floured surface to about 1/8 inch thickness using a rolling pin with bumpers set to 1/8 inch.

10

Cut out circular cookies using a cookie cutter and place them on a baking sheet lined with parchment paper.

11

Bake at 350°F for about 8 minutes, rotating the pan halfway through for even baking.

12

Prepare dulce de leche, either store-bought or homemade.

13

Once cookies are baked and cooled, pipe or spoon dulce de leche onto one cookie and sandwich with another.

14

Roll the edges of the sandwich in desiccated coconut.
