Mix flour, yeast, and sugar in a large bowl until combined.
Add warm water and olive oil to the dry mixture and stir until a dough forms.
Knead the dough on a floured surface until smooth, about 5-7 minutes.
Cover the dough with a cloth and let it rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 180°C (350°F).
Roll out the dough on a floured surface to about 1 cm thick.
Cut the dough into desired shapes using cookie cutters.
Mix cinnamon, nutmeg, and sugar in a small bowl for sprinkling.
Brush the dough shapes with beaten eggs and sprinkle the spice mixture on top.
Place the shaped dough on a baking sheet lined with parchment paper.
Bake in the preheated oven until golden brown, about 15-20 minutes.
Remove from the oven and let cool on a wire rack.
Drizzle with honey and sprinkle with sesame seeds before serving.
