Activate the yeast by mixing 7 g of dry yeast with 1 tablespoon of sugar and 1 tablespoon of warm water. Let it rest for 10-15 minutes.
In a bowl, combine 400 g of sifted flour, 1 egg, salt (optional), lemon zest, and 200 ml of warm milk.
Add 6-8 tablespoons of sugar to taste and the activated yeast mixture.
Incorporate 30 ml of oil (or melted butter) and mix well.
Gradually add more flour until a soft, slightly sticky dough forms, totaling about 600 g of flour.
Knead the dough with the oil until smooth and let it rise in a warm place for 2-3 hours.
Prepare the filling by mixing 800 g of sweet cottage cheese, 4 eggs, soaked raisins, and vanilla (optional).
Divide the dough into two equal parts and let it rest for 5 minutes.
Roll out the dough to about 1 cm thick and brush with approximately 50 g of melted butter.
Spread half of the cheese filling evenly over the dough, roll tightly, and seal the edges well.
Cut the rolled dough into smaller pieces as desired, yielding about 30 mini pastries.
Place the pastries in a greased baking tray, leaving space between them, and brush with a beaten egg.
Bake in a preheated oven at 180°C for 20-25 minutes, adjusting time based on your oven.
Dust with powdered sugar before serving.
