Ingredients
- ●2 cups long-grain white rice
- ●1 can (15 oz) red beans, drained and rinsed
- ●1 medium onion, chopped
- ●2 cloves garlic, minced
- ●1 green bell pepper, chopped
- ●1 tsp dried thyme
- ●1 tsp paprika
- ●1/2 tsp cayenne pepper
- ●2 cups vegetable broth
- ●2 tbsp olive oil
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●2 green onions, sliced (for garnish)
Instructions
- 1Rinse the rice under cold water until the water runs clear, then drain.
- 2In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and green bell pepper. Sauté until the vegetables are soft, about 5 minutes.
- 3Stir in the thyme, paprika, cayenne pepper, salt, and black pepper. Cook for another minute until fragrant.
- 4Add the rinsed rice to the pot and stir to coat the rice with the vegetable mixture.
- 5Pour in the vegetable broth and bring to a boil.
- 6Once boiling, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- 7Stir in the red beans and cook for an additional 5 minutes to heat through.
- 8Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- 9Serve hot, garnished with sliced green onions.

- ●4 cups water
- ●1 tsp salt
- ●2 cups shredded cheddar cheese
- ●1 cup milk
- ●1/2 cup sour cream
- ●1/4 cup butter
- ●1/2 tsp black pepper
- ●1/2 tsp paprika
- ●1/4 cup breadcrumbs
Instructions
- 1Preheat your oven to 350°F (175°C).
- 2In a large pot, bring 4 cups of water to a boil and add 1 tsp of salt.
- 3Add the elbow macaroni to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.
- 4Drain the macaroni and set aside.
- 5In a large mixing bowl, combine the cooked macaroni, shredded cheddar cheese, milk, sour cream, butter, black pepper, and paprika. Mix well until all ingredients are combined.
- 6Transfer the macaroni mixture into a greased baking dish.
- 7Sprinkle breadcrumbs evenly over the top of the macaroni mixture.
- 8Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- 9Remove from the oven and let it cool for a few minutes before serving.
