Ingredients

  • 2 cups long-grain white rice
  • 1 can (15 oz) red beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. 1Rinse the rice under cold water until the water runs clear, then drain.
  2. 2In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and green bell pepper. Sauté until the vegetables are soft, about 5 minutes.
  3. 3Stir in the thyme, paprika, cayenne pepper, salt, and black pepper. Cook for another minute until fragrant.
  4. 4Add the rinsed rice to the pot and stir to coat the rice with the vegetable mixture.
  5. 5Pour in the vegetable broth and bring to a boil.
  6. 6Once boiling, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. 7Stir in the red beans and cook for an additional 5 minutes to heat through.
  8. 8Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  9. 9Serve hot, garnished with sliced green onions.

Ingredients

  • 2 cups elbow macaroni
  • 4 cups water
  • 1 tsp salt
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/4 cup butter
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup breadcrumbs

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large pot, bring 4 cups of water to a boil and add 1 tsp of salt.
  3. 3Add the elbow macaroni to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.
  4. 4Drain the macaroni and set aside.
  5. 5In a large mixing bowl, combine the cooked macaroni, shredded cheddar cheese, milk, sour cream, butter, black pepper, and paprika. Mix well until all ingredients are combined.
  6. 6Transfer the macaroni mixture into a greased baking dish.
  7. 7Sprinkle breadcrumbs evenly over the top of the macaroni mixture.
  8. 8Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  9. 9Remove from the oven and let it cool for a few minutes before serving.
