Shawarma-Spiced Chickpea Bowls

1 tablespoon olive oil
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon ground turmeric
1 (16-ounce/454g) can low-sodium chickpeas, rinsed and drained
1/2 cup (120g) plain 0% Greek yogurt
1 tablespoon fresh lemon juice
3/8 teaspoon kosher salt, divided
1/4 teaspoon black pepper
1 cup (140g) tomato, chopped
1 cup (140g) English cucumber, chopped
1 medium avocado, peeled, pitted and diced

Heat a medium skillet over medium heat.

Add olive oil to the pan and swirl to coat.

Stir in ground cumin, garlic powder, smoked paprika, and ground turmeric; cook for 30 seconds.

Add chickpeas to the pan; cook until lightly toasted, stirring frequently, about 5 minutes.

In a small bowl, combine Greek yogurt, lemon juice, 1/4 teaspoon kosher salt, and black pepper.

In a medium bowl, combine chopped tomato, chopped cucumber, and remaining 1/8 teaspoon kosher salt.

Spread about 1/4 cup yogurt mixture onto the bottom of two shallow bowls.

Arrange about 3/4 cup chickpeas, 1 cup tomato mixture, and half of the diced avocado into each bowl.
