In a bowl, mix water with red chili powder, turmeric powder, dry mango powder, roasted cumin powder, garam masala, and coriander powder to make a paste.
Heat half a tablespoon of oil in a pan and add the spice paste; mix until it dries a little.
Add the baked potatoes to the pan and mix well to coat them in the masala.
Let the potatoes dry a little more in the pan.
Garnish with fresh coriander before serving.
