Pineapple Shrimp

1 cup pineapple juice
1 cup chicken broth
2 tbsp soy sauce
1 tbsp sriracha sauce
1 tbsp light brown sugar
1 tbsp rice vinegar
1 tbsp shredded ginger
1 tbsp cornstarch
1 cup red bell pepper, chopped
2 green onions, chopped
1 cup pineapple chunks
1 tbsp olive oil
1 lb shrimp, peeled and deveined
1/2 tsp salt
1/4 tsp black pepper

Combine pineapple juice, chicken broth, soy sauce, sriracha sauce, light brown sugar, rice vinegar, shredded ginger, and cornstarch in a saucepan over medium heat.

Chop red bell pepper and green onions.

Cut a pineapple into cubes; later use this pineapple as a bowl.

Pour 3 teaspoons of olive oil into a pan over medium heat.

Add shrimp mixed with salt and pepper to the pan and fry for only 2 minutes on each side.

Add 1 teaspoon of oil in the same pan, then add red bell pepper and pineapple cubes.
