Pineapple Shrimp

1 pound RAW jumbo shrimp deveined and cleaned
1 red bell pepper seeded, cored, deveined, and cut into 1-inch pieces
1 cup pineapple chunks fresh or canned
3 cloves garlic minced
1 teaspoon minced ginger
salt and pepper to taste
2 teaspoons cornstarch
1 tablespoon water
3/4 cup pineapple juice
1/4 cup low sodium soy sauce
1/3 cup low sodium chicken broth
1/3 cup hoisin sauce
1/4 cup brown sugar packed
1 teaspoon sesame seeds
1 tablespoon sliced green onions

Heat the vegetable oil in a pan over medium heat.

Add the garlic and ginger, sauté until fragrant.

Add the shrimp and cook until they turn pink.

Stir in the red bell pepper and pineapple chunks, cooking until the pepper is tender.

In a bowl, mix the pineapple juice, soy sauce, chicken broth, hoisin sauce, and brown sugar to create the sauce.

Add the sauce to the pan and bring to a simmer.

Mix cornstarch with water to create a slurry, then add it to the pan to thicken the sauce.

Season with salt and pepper to taste.

Garnish with sesame seeds and green onions before serving.
