Preheat the oven to 170°C (338°F).
Spread the peeled almonds on a baking sheet.
Toast the almonds in the oven for 5 minutes, being careful not to let them darken too much.
In a large saucepan, add sugar evenly across the bottom.
Add sugar gradually to the saucepan as it begins to caramelize, without stirring to avoid clumping.
Once the sugar starts to melt and turn golden, continue to add the remaining sugar evenly.
Stir gently to avoid clumping once most of the sugar has melted and is transparent and golden.
Add warm honey gradually to the caramel, mixing well to achieve a smooth consistency.
Add lemon juice to prevent sugar crystallization, though it can be omitted if desired.
Once the almonds are warm, add them to the caramel and mix well to coat them evenly.
Prepare a baking sheet with parchment paper and spray the sides with non-stick spray for easy removal.
Let the mixture rest at room temperature until completely cool, about 30 minutes.
To clean the saucepan, fill it with water covering the caramel residue, bring to a boil to dissolve the caramel, and then wash it thoroughly.
Once set, cut the croccante into bars.
