Preheat the oven to 400 degrees Fahrenheit.
Spread 2 cups of raw almonds on a cookie sheet.
Roast the almonds in the oven for about 10-12 minutes, shaking them halfway through after 5 minutes.
In a medium saucepan, combine 2 3/4 cups of caster sugar, 2 tablespoons of unsalted butter, and 2 tablespoons of water over medium heat.
Add the juice of 1 lemon, 2 tablespoons of honey, 1 teaspoon of vanilla, a pinch of salt, and the zest of 1 lemon to the saucepan and stir well.
Continue to cook the caramel until it starts to brown, stirring occasionally.
Once the caramel is ready, remove the roasted almonds from the oven and set them aside.
Quickly add the roasted almonds to the caramel and stir to coat them evenly.
Pour the mixture onto a parchment-lined baking sheet and spread it into an even layer.
Allow the brittle to cool completely at room temperature before breaking it into pieces.
