Cut the duck breast and bacon into pieces, tying the bacon if necessary.

Sear the duck breast in a pot with the fat side down for about 2 minutes without oil.

Flip the duck breast, season with salt, and cook for a couple more minutes.

Add extra virgin olive oil, chopped onion, carrot, and garlic to the pot; sauté for 3-4 minutes.
