Preheat the oven to 350°F (175°C).
Season the duck with salt and black pepper.
Heat olive oil in a large oven-safe pot over medium heat.
Brown the duck on all sides until golden, about 5-7 minutes.
Remove the duck and set aside.
In the same pot, sauté chopped onion, garlic, and carrot until softened, about 5 minutes.
Add chorizo and cook for another 3-4 minutes until it releases its oils.
Stir in rice, bay leaves, and thyme, cooking for 2 minutes to toast the rice.
Pour in white wine and let it simmer until mostly evaporated, about 2-3 minutes.
Add chicken broth and bring to a boil.
Return the duck to the pot, cover, and transfer to the oven.
Bake for 1 hour or until the duck is tender and the rice is cooked through.
Remove the duck, shred the meat, and discard the bones.
Fluff the rice with a fork and stir in shredded duck.
Garnish with chopped parsley and lemon zest before serving.
