In a bowl, mix together 250 ml hot beef stock, 3 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon Chinese rice wine or sherry, 2 teaspoons sesame oil, 3 tablespoons light brown sugar, 1/8 teaspoon white pepper, and 1/8 teaspoon black pepper to make the sauce.

Slice 500 grams of skirt steak thinly and place in the freezer for 10 to 15 minutes to firm it up for easier slicing.

Heat 2 tablespoons of vegetable oil over high heat in a wok or large frying pan.

Add the sliced steak and cook for 2 to 3 minutes, turning once or twice until just cooked. Transfer the steak to a bowl using a slotted spoon, leaving any liquid behind in the pan.

Add 450 grams of tender stem broccoli to the pan and stir fry for 2 minutes, stirring often.
