Slice the New York steak into a quarter inch thick pieces.

Marinate the beef with 1 egg white, 1/8 teaspoon white pepper, 1 teaspoon rice wine, 3 teaspoons cornstarch, and 1 tablespoon regular soy sauce. Massage the marinade into the beef for about 2 minutes.
