1 tablespoon cornstarch
1/4 teaspoon baking soda
Pinch of salt and pepper
1/2 tablespoon rice wine vinegar
2 tablespoons water
1 tablespoon oyster sauce
1/2 tablespoon brown sugar
1/2 teaspoon sesame oil
2 tablespoons water

Cut 1 medium head of broccoli into florets.

Mince 4 cloves of garlic and thinly slice 1 thick piece of ginger.

Slice 1 lb flank steak into thin slices against the grain.

Prepare the marinade by combining 1 tablespoon oyster sauce, 1/2 tablespoon soy sauce, 1 tablespoon cornstarch, 1/4 teaspoon baking soda, and a pinch of salt and pepper. Add the beef and stir. Set aside to marinate for 1/2 an hour.

Prepare the sauce by combining 1/2 tablespoon rice wine vinegar, 2 tablespoons water, 1 tablespoon oyster sauce, 1/2 tablespoon brown sugar, and 1/2 teaspoon sesame oil.

Put a pot of water on the stove and bring to a boil.

While waiting for the water to boil, make 2 cups of rice.

Once the pot of water comes to a boil, add in the broccoli and cook until desired softness.

Prepare an ice bath or a tub of really cold water.

Once the broccoli reaches the desired softness, strain and drain it, then put it into the ice bath to cool down (optional).

Warm a wok or pan over high heat, then add oil, garlic, and ginger. Sauté until fragrant, about 1 minute.

Add the marinated beef and brown on both sides, about 1-2 minutes.

Add the prepared sauce and stir until thickened.

Add in the broccoli and give a quick toss.

Serve over rice.
