Peel and cut kamote into fry shapes.
Soak the cut kamote in water for 30 minutes to remove excess starch.
Drain and pat the kamote dry with paper towels.
In a bowl, toss the kamote with salt, black pepper, garlic powder, and paprika until evenly coated.
Heat cooking oil in a deep fryer or large pot over medium-high heat until shimmering.
Carefully add the kamote fries to the hot oil in batches, avoiding overcrowding.
Fry until golden brown and crispy, about 5-7 minutes.
Use a slotted spoon to remove the fries and drain on paper towels.
Sprinkle with additional salt and fresh herbs if desired.
Serve immediately while hot.
