Chop the onion, leaving it chunky.
Drizzle mild olive oil into a medium sized pot.
Cook the onions on medium high heat for the first 5 minutes, then reduce to low and caramelize for 10-20 minutes.
Chop garlic and add it to the pot with the chili once the onions are caramelized, cooking on low heat for a few minutes.
Trim the ends of the green beans and add them to the pot.
Drizzle more mild olive oil over the green beans and sauté until vibrant green.
Add 1 tablespoon of tomato concentrate and the chopped fresh tomatoes to the pot, mixing well.
Add salt and about half a cup of boiling hot water to help create the sauce.
Bring the sauce to a boil, then reduce the heat to the lowest and cover, cooking for 20-30 minutes until the green beans are well done.
