Banana Bars with Cream Cheese Frosting

Banana bars are a delightful American dessert that originated as a way to use overripe bananas. Often enjoyed at potlucks and gatherings, these bars combine the sweetness of bananas with a rich cream cheese frosting. They are a beloved treat in many households, showcasing the versatility of bananas in baking. Today, variations abound, with some adding nuts or chocolate chips, but the classic version remains a favorite.

Greek yogurt reduces calories while maintaining creaminess
Start by creaming together 3/4 cup of butter at room temperature, 2/3 cup of white sugar, and 2/3 cup of brown sugar using a hand mixer until light and fluffy.
Add 1 teaspoon of vanilla extract and mix it in.
Incorporate 1 large egg and 1 cup of mashed banana into the mixture, mixing well to combine.
In a separate bowl, mix together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt until well combined.
Add the dry ingredients to the banana mixture and mix until there are no ribbons of flour and the batter is homogenous.
Fold in 2 cups of mini chocolate chips into the batter.
Pour the batter into a lightly greased 10x15 pan and spread it out evenly.
Place the pan into a preheated 350°F oven and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out mostly clean with just a crumb or two attached.
Once the bars are completely cooled, prepare the cream cheese frosting by creaming together 8 oz of room temperature cream cheese and 1/2 cup of room temperature butter until light and fluffy.
Add 1 teaspoon of vanilla extract and 2 cups of confectioner sugar, mixing until smooth and lump-free.
Spread the cream cheese frosting thickly over the cooled banana bars.
