Today, variations abound, with some incorporating nuts or chocolate chips, but the classic version remains a favorite.

Erythritol is a low-calorie sweetener, while granulated sugar is less expensive.
Preheat the oven to 350°F (175°C).
In a large bowl, add 1 stick of butter and 1.5 cups of sugar and mix well.
Add 2 eggs to the mixture and mix again.
Pour in 3/4 cups of milk and 1 teaspoon of vanilla, then mix again.
In a separate bowl, combine 2 cups of flour and 1 teaspoon of baking soda and mix with a fork.
Add the dry ingredients to the wet ingredients and blend until combined.
Smash 2 ripe bananas until they resemble baby food and add them to the mixture.
Add 1 cup of nuts (optional) to the mixture.
Spray a baking pan with nonstick spray and evenly spread the mixture in the pan.
Bake for 25 minutes.
While the banana bars are baking, prepare the caramel sauce by melting 1 stick of butter in a saucepan over medium to high heat.
Add 1/2 cup of sugar, 1/2 cup of brown sugar, and 1/4 cup of milk to the melted butter and stir.
Remove from heat and add a pinch of salt and 1 and 3/4 cups of powdered sugar, mixing until smooth.
Add 1/4 teaspoon of vanilla to the caramel mixture and mix again.
Once the banana bars are done baking, remove them from the oven and pour the caramel mixture over the top, spreading it evenly.
Allow the caramel sauce to harden before serving.
