French Onion Meatballs

1 cup shredded Gruyère cheese
1 large onion, finely chopped
1 lb ground beef

Preheat the oven to 375°F (190°C).

In a large skillet, sauté the chopped onion in a little oil over medium heat until caramelized, about 15-20 minutes. Remove from heat and let cool.

In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, salt, pepper, and thyme. Add the cooled onion and garlic mixture to the bowl and mix until well combined.

Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.

In a separate bowl, mix the beef broth and French onion soup together. Pour this mixture over the meatballs in the baking sheet.

Cover the baking sheet with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and sprinkle the shredded Gruyère cheese over the meatballs.

Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
