Get an oven-proof pan and add a generous amount of olive oil.
Add in the onions and cook for a few minutes until softened.
Add in all the spices and salt, cooking for about a minute.
Add the garlic and stir.
Add the basmati rice and stir for a few minutes to toast it; do not wash the rice.
Once the rice has toasted, add a good splash of wine.
Add in the diced tomatoes and tomato paste.
Pour in about a cup of stock and reduce heat to low.
Add in the mushrooms or any remaining vegetables and stir; allow to simmer until most of the liquid has dried out.
If needed, add more stock, stirring occasionally until the rice is al dente and not too runny.
Add a dash of Worcestershire sauce.
Once the rice is cooked, place the dish in the oven on grill mode to crisp up the rice.
Top with chorizo and return to the oven for a couple of minutes to heat the chorizo and crisp the rice further.
Grate fresh parmesan cheese on top before serving.
