Crush up a few cloves of garlic (about half a head) and peel the skins.

Add garlic to a saucepan with 15 g of sugar and 30 g of soy sauce.

Cover the chicken drumsticks with enough water to fully submerge them.

Bring the saucepan to medium heat until it boils, then add the chicken drumsticks and sprinkle with salt.

Cover with a lid and let it simmer.

Prepare the vegetables: tear or cut lettuce leaves into smaller chunks (about half to one quarter of your palm).

Cut the carrots into slices, then julienne them. Optionally, use a mandolin for this step.

Pick a few top leaves of Thai basil from the garden and set aside.

Cut spring onions into thin strips.

For the sauce, combine 2 parts smooth peanut butter, 1 part hoisin sauce, and a squirt of Sriracha in a bowl and mix.

Bring a pot of water to boil and add in a couple of bundles of vermicelli noodles, cooking them for about a minute.

Drain the vermicelli into a large bowl to save the water, then rinse the noodles to cool them off.

Dip rice paper into the warm vermicelli water to soften it faster.

For assembly, place lettuce at the base, followed by vermicelli, Thai basil, carrots, spring onions, and chicken on top.

Roll the rice paper from the bottom, folding in the sides as you go, to create a tight roll.
