For the base, combine 1 1/2 cup crushed graham crackers with 6 tbsp melted butter.
Press the mixture into an acrylic cake box (450ml) and set aside to chill.
In a small bowl, add 30ml water and sprinkle 1 tbsp unflavored gelatin over it to let it bloom and set aside.
In a mixing bowl, add 250g cream cheese (at room temperature) and 1/4 cup sugar, then beat until smooth and creamy.
In another bowl, add 250ml heavy/whipping cream and mix well, scraping down the sides of the bowl.
Beat the heavy cream until smooth.
Melt the bloomed gelatin in hot water and pour it directly into the cream cheese mixture while hot, mixing until well combined.
Add salted caramel sauce to the mixture and stir.
Chill the cheesecake overnight.
Top with salted caramel sauce and leche flan before serving.
