Add graham crackers and pretzels to a food processor and pulse until fine, leaving some chunky bits of pretzel for texture.
Add melted butter to the cookie mixture in the food processor and blend until combined.
Press the cookie mixture into an 8-inch cheesecake tin, bringing it up the sides for a different look, then refrigerate.
In the food processor, blend cream cheese and homemade dulce de leche until smooth and lump-free.
Add heavy cream, salt, and vanilla extract to the cream cheese mixture and whip until thick.
Set the cream cheese mixture aside in the fridge to keep it cold.
In a heavy-bottom saucepan, melt butter and sugar over low heat until the sugar dissolves, then simmer until it turns to caramel, stirring to prevent burning.
Once caramel is a rich color, remove from heat and stir in toasted chopped almonds, vanilla extract, and salt, then pour onto a tray lined with tin foil and spread out.
After 5 minutes, break the almond brittle into small pieces.
To assemble the cheesecake, add half of the cheesecake mix to the base and spread it out, then scatter a generous amount of the almond brittle on top.
Add the remaining cheesecake mix and smooth the top with a spatula, then refrigerate for a minimum of 24 hours to set.
After chilling, gently run a spatula around the rim of the tin to release the cheesecake, then carefully remove it from the tin and place it on a serving platter.
Drizzle caramel sauce over the top, scatter crushed praline, and pipe whipped cream rosettes on top, finishing with a sprinkle of brittle.
