Vegan Waffles

1 tbsp apple cider vinegar
1 tbsp ground flax seed
2 tbsp water

3/4 cup sugar
1/2 tsp sea salt
2 tsp baking powder

Measure out 1.5 cups of unsweetened soy milk and add 1 tablespoon of apple cider vinegar to make vegan buttermilk. Set aside to curdle.

In a separate bowl, mix 1 tablespoon of ground flax seed with 2 tablespoons of water and let it sit to thicken.

In a large bowl, combine 1.5 cups of all-purpose flour, 3/4 cup of sugar, 1/2 teaspoon of sea salt, 2 teaspoons of baking powder, and 1/2 teaspoon of baking soda. Whisk together.

Melt 6 tablespoons of vegan butter in the microwave until liquefied.

Check the buttermilk; it should be thicker now. Check the flax egg; it should also be thick and gelatinous.

In the bowl with the melted vegan butter, add the thick vegan buttermilk, the thick flax egg, and 2 teaspoons of vanilla extract. Mix until combined.

Add the wet ingredients to the dry ingredients and whisk until just combined, being careful not to overmix.

Preheat the waffle iron for 10-15 minutes until hot. Brush the waffle iron with a little melted vegan butter.

Pour about 1/3 cup of batter into the hot waffle iron and close it. Cook until the steam dissipates, indicating the waffle is done.

Transfer the cooked waffle to a cooling rack and repeat the process until all batter is used up. Adjust cooking time and temperature as needed for desired crispiness.
