1 cup pecans

200 g pumpkin seeds
150 g sunflower seeds
1 to 3 tablespoons cinnamon
1 to 2 cups dried fruit (dates, figs, apricots, prunes)
1/4 cup maple syrup

Tear off a large piece of greaseproof paper to cover the baking tray and scrunch it up to make it easier to fit in the tray.

Add 4 cups of jumbo rolled oats into a large Ziploc bag.

Add just over a heaped tablespoon of cinnamon into the bag.

Add 1/4 cup of flax seeds into the bag.

Add almost a cup of sunflower seeds into the bag.

Chop 1 cup of pecans using a mini chopper or by hand until they look like large breadcrumbs and add to the bag.

Chop 1/2 cup of walnuts until they look like large breadcrumbs and add to the bag.

Seal the bag and mix the dry ingredients until evenly distributed.

Add 1/4 cup of maple syrup into the bag, seal it, and shake until the mixture starts to clump together.

If the mixture isn't clumping, add an additional 1/8 cup of maple syrup and shake again until it clumps nicely.

Spread the mixture evenly on the lined baking tray.

Bake at 170°C for 30 minutes, stirring every 5 minutes to ensure even cooking and prevent burning.

After 15 minutes, check the granola and stir to distribute heat and color evenly.

Once finished baking, let the granola cool while preparing the dried fruits.

Chop the dried fruits into bite-sized pieces and add them to the Ziploc bag with the granola.

Use hands to mix half of the cooled granola into the bag with the dried fruits, then use the greaseproof paper to funnel the rest into the bag.

Seal the bag and gently stir to incorporate the dried fruits throughout the granola.
