Start with 1 and 3/4 cups of hot water, about 110°F.
Add 2 tablespoons of olive oil to the bread machine pan.
Add 1 teaspoon of pink salt to the pan.
Add 1 teaspoon of sugar to the pan.
Measure and add 4 cups of bread flour to the pan.
Add 2 teaspoons of active dry yeast on top of the flour.
Put the pan into the bread machine and select the dough cycle, which takes 1.5 hours.
After 6 minutes of kneading, check the dough; if it sticks, add an eighth of a cup of flour until it pulls away from the sides.
Once the dough looks good, close the bread machine and let it finish the dough cycle.
After 1.5 hours, remove the dough from the machine; it should have risen nicely.
Dust the countertop with flour and gently turn out the dough without punching it down.
Shape the dough into a round ball (boulé) by lifting the sides into the middle and flipping it over.
Create surface tension by pulling the dough into itself while flipping it over.
Transfer the shaped dough onto parchment paper and place it in a bowl to rise for about 30 minutes.
Prepare a Dutch oven for baking; the creator uses a cast iron Dutch oven.
