1 cup (~200g) granulated stevia
1 1/2 cups (190 g) almond flour
1/3 cup (40 g) cocoa powder
2 tsp (8 g) baking powder
1 tsp vanilla extract
1 tsp coffee
1/2 cup (120 ml) coconut oil
200 g Keto chocolate /95 % Dark chocolate Lindt / 70% Cocoa Chocceur
220g Cream cheese
1/3 cup Keto Sweetener
1/2 cup Heavy cream
Vanilla (optional)
Grated dark chocolate 100g (optional)
1 Block of melted 95% Dark Chocolate Lindt
1 Cup of Cream
1/3 cup of Sweetener
Raspberries to decorate

Preheat the oven to 150 C.

Place the eggs in a bowl and whisk on high speed for 8 minutes, until eggs are pale, thick and fluffy.

Combine the dry ingredients: almond flour, stevia, cocoa powder and baking powder.

Sift the dry ingredients into the eggs in small batches, folding gently but thoroughly after each addition.

Add the vanilla, coffee and oil last. Fold the oil into the cake batter briefly, for about 20 seconds.

Bake the cake in the preheated oven for 40 minutes, until the centre is set. Allow the cake to cool in the baking pan.

Beat cream cheese and powdered sweetener until combined.

Add in the melted chocolate and beat to combine.

Add in the heavy cream, until creamy and fluffy. (I put the mousse in piping bag and used in between the layers of cake)

Once cake is cooled - I placed first layer in plastic cylinder and piped the mousse in between each layer, then placed the whole cake into fridge for about 2 hours to allow the mousse to set.

Beat cream and powdered sweetener until combined and thicken.

Add melted chocolate and stir in till incorporated. I put this cream into piping bag for chocolate swirls. Using Plastic Star tip nozzle # 13.

Melt chocolate and put in piping bag, cup tip with scissors and drizzle on wax paper then put in fridge to set for about 5 minutes.

Using any cookie cutter of choice (I used a Wilton Plague cookie cutter) cut out desired shape on chocolate and use to decorate by placing onto on cream swirls.
