1 (12 ounce) package dry black beans, soaked overnight
1 1/2 cups chopped onion, divided
1/2 cup green onions, chopped
1 clove garlic, chopped
2 smoked ham hocks or sausage
1/2 pound thickly sliced bacon, diced
1 tablespoon olive oil
2 bay leaves, crushed
1/8 teaspoon ground coriander
Salt and pepper to taste
1/2 cup chopped fresh cilantro (optional)
1/4 cup chopped fresh parsley (optional)

Pour the beans into a pressure cooker, and then add water, leaving at least a third of the pan empty.

Cook for about 20 minutes in the pressure cooker.

If not using a pressure cooker, soak the beans overnight in a large bowl covered with water (at least 1 inch above the beans). Cook for up to 3 hours until soft.

Once the beans are soft, add spices and seasonings.

Chop half an onion and a few cloves of garlic.

Fry the onions and garlic in olive oil, then add the sausage and sauté until cooked.

Mix in a few ladlefuls of the black beans to pick up the flavor, then pour this mixture back into the pot with the rest of the beans.

Add bay leaves, salt, and pepper to taste, and let it cook for another 20 minutes.
