Season with salt, pepper, and bay leaves; cook for 10 minutes to thicken.

Add white fish fillets and capers; simmer until fish is cooked through, about 8-10 minutes.

Stir in chopped parsley and sliced black olives; cook for another 2 minutes.

Remove bay leaves before serving.

Serve with lemon wedges on the side.
