Recipe Information
Zucchini Lasagna Roll-Ups
Grate the zucchine and squeeze out excess moisture.
Beat the eggs and mix with the grated zucchine.
Spread the mixture onto a baking sheet lined with parchment paper.
Bake until set and lightly golden.
Remove from the oven and let cool slightly.
Spread the prosciutto cotto, provola, and formaggio spalmabile over the baked zucchine layer.
Roll the zucchine tightly into a log shape.
Slice and serve.
