4-5 tablespoons cream
2 onions

Light the fire and heat a pressure cooker.

Add approximately ½ cup of oil to the cooker.

Add 1 kg of mutton to the hot oil and sauté for about 4-5 minutes to eliminate the smell.

Add 2 tablespoons of ginger-garlic paste and fry for 2-3 minutes until the raw smell is gone.

Prepare the spices: roast 1½ tablespoons of whole coriander, 1 tablespoon of cumin, and ½ teaspoon of black pepper until dry.

Let the roasted spices cool and then grind them coarsely.

Add the ground spices to the mutton along with ¼ teaspoon of turmeric and ½ tablespoon of salt. Fry for 3-4 minutes to mix well.

Grind 2 medium-sized onions and 5 green chilies into a paste.

Add the onion and chili paste to the mutton and fry for another 4-5 minutes until the oil separates.

Add 1 glass of water to the mixture and cover the cooker, cooking for 12-15 minutes under pressure.

Release the steam after 15 minutes and check if the mutton is tender.

If there is excess water, sauté for 2-3 minutes to dry it out.

Add 250 grams of yogurt to the mutton, whisk it well, and stir continuously over medium heat to prevent curdling.

Once the yogurt's water is reduced, add 4-5 tablespoons of cream for a creamy texture.

Add finely chopped ginger and coriander, and ½ teaspoon of garam masala powder.

Heat 2 small pieces of coal until hot, place them in the dish, drizzle with a few drops of oil, and cover for 2-3 minutes to infuse smoke flavor.

Garnish with chopped green chilies, coriander, and ginger before serving.
