Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, frozen or canned
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 egg, beaten (for sealing)
  • Oil for frying

Instructions

  1. 1In a large bowl, combine the cooked chicken, black beans, corn, red bell pepper, green onions, cilantro, cumin, chili powder, salt, and black pepper. Mix well.
  2. 2Lay a tortilla flat on a clean surface. Place about 1/4 cup of the filling mixture in the center of the tortilla.
  3. 3Sprinkle about 2 tablespoons of shredded cheese over the filling.
  4. 4Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Seal the edges with a little beaten egg.
  5. 5Repeat the process with the remaining tortillas and filling.
  6. 6In a large skillet, heat oil over medium heat for frying. You need enough oil to cover the bottom of the skillet.
  7. 7Once the oil is hot, carefully place the egg rolls in the skillet, seam side down. Fry until golden brown, about 3-4 minutes per side.
  8. 8Remove the egg rolls from the skillet and place them on a paper towel-lined plate to drain excess oil.
  9. 9Serve warm with your choice of dipping sauce, such as ranch or salsa.
