Instructions
- 1In a large bowl, combine the cooked chicken, black beans, corn, red bell pepper, green onions, cilantro, cumin, chili powder, salt, and black pepper. Mix well.
- 2Lay a tortilla flat on a clean surface. Place about 1/4 cup of the filling mixture in the center of the tortilla.
- 3Sprinkle about 2 tablespoons of shredded cheese over the filling.
- 4Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Seal the edges with a little beaten egg.
- 5Repeat the process with the remaining tortillas and filling.
- 6In a large skillet, heat oil over medium heat for frying. You need enough oil to cover the bottom of the skillet.
- 7Once the oil is hot, carefully place the egg rolls in the skillet, seam side down. Fry until golden brown, about 3-4 minutes per side.
- 8Remove the egg rolls from the skillet and place them on a paper towel-lined plate to drain excess oil.
- 9Serve warm with your choice of dipping sauce, such as ranch or salsa.

- 7Remove from the oven and drizzle sour cream over the loaded tater tots.
- 8Sprinkle chopped green onions and jalapeños (if using) on top for garnish.
- 9Season with garlic powder, onion powder, and black pepper to taste.
- 10Serve immediately while hot.
