Marinate beef ribs overnight with salt, pepper, garlic pepper, onion pepper, paprika, and red pepper flakes.
Wrap the marinated ribs in plastic wrap and then in aluminum foil to preserve moisture.
Preheat the oven to 325°F.
Place the wrapped ribs on a rack in the oven and cook for approximately 3.5 hours.
Prepare Idaho potatoes by peeling and cutting them into chunks, then soaking them in water to prevent discoloration.
Sauté garlic in preparation for the mashed potatoes.
After 3.5 hours, prepare the homemade barbecue sauce by combining ketchup, honey, molasses, apple cider vinegar, Worcestershire sauce, black pepper, salt, onion powder, garlic powder, brown sugar, and a pinch of cornstarch in a saucepan.
Simmer the barbecue sauce on low heat for 10-15 minutes, stirring occasionally and tasting for seasoning.
Strain the soaked potatoes and add them to a pot of boiling water to cook until tender.
Once the potatoes are cooked, add butter and sautéed garlic, then use a handheld mixer to mash them, adding heavy cream gradually until desired consistency is reached.
Check the ribs in the oven, then remove them and unwrap to retain juices.
Lather the barbecue sauce on the ribs and return them to the oven for an additional hour to caramelize the sauce.
Serve the ribs with garlic mashed potatoes and homemade barbecue sauce.
