2 cups pomegranate juice
1/2 cup apricot jelly
1 tablespoon balsamic vinegar
1 tablespoon honey
1 tablespoon molasses
2 tablespoons red wine vinaigrette
2 tablespoons Korean red chili powder (optional)
1 1/2 tablespoons sumac spice
1/2 cup rum (optional)

Cut the tips off 2 pounds of chicken wings.

Spray the wings with Pam cooking spray or coat with olive oil for a binder.

Season the wings with Grillaholics salt pepper garlic mix.

Preheat the grill to 275-300°F and add sassafras wood chips for smoking.

Place the wings on the opposite end of the fire to cook and smoke them.

In a saucepan, combine 2 cups of pomegranate juice, 1/2 cup apricot jelly, 1 tablespoon balsamic vinegar, 1 tablespoon honey, 1 tablespoon molasses, and 2 tablespoons red wine vinaigrette.

Optionally, add 2 tablespoons of Korean red chili powder and 1 1/2 tablespoons of sumac spice to the mixture.

Optionally, add 1/2 cup of rum for sweetness and spice.

Simmer the sauce for 15-20 minutes until it thickens and reduces by half.

Check the wings after 20-30 minutes; they should be starting to get color but are not done yet.

Toss the wings in the reduced sauce to coat them.

Return the coated wings to the grill and increase the heat to caramelize the sauce, cooking for about 5-6 minutes while keeping an eye on them to prevent burning.
