1

Remove impurities from dried mushrooms before use.

2

Add dried mushrooms to a pot with 10 cups of water and cook on medium-high for 20 minutes to create mushroom stock.

3

Strain the stock and set aside, using 8 cups for the rice.

4

Season shrimp with 1 tablespoon epis, 1 tablespoon garlic paste, thyme, garlic powder, onion powder, and creole seasoning, then marinate for 5-10 minutes.

5

In the same pot, heat 2 tablespoons coconut oil and cook shrimp for about 3 minutes on each side before removing.

6

Add 2 more tablespoons coconut oil to the pot, then add epis and garlic paste, cooking for 5 minutes.

7

Add ground clove, thyme, onion powder, garlic powder, and frozen beans/peas, cooking for another 5 minutes.

8

Add bay leaves, unsalted butter, habanero pepper, and a splash of coconut milk to dissolve the maggi cube, then add the rest of the coconut milk and boil for 10 minutes.

9

Add 8 cups of mushroom stock, bring to a boil, and adjust salt to taste.

10

Rinse rice under cool water until the water runs clear, then add to the pot.

11

Stir rice gently, add most of the shrimp and any liquid they produced, and cook until liquid is mostly absorbed.

12

Add remaining shrimp, stir, cover, and reduce heat to medium-low, cooking for 30-35 minutes.
