Start with 1/2 cup of fine bulgur and add 4 tablespoons of hot water to it to let it expand and soften.

Use a small food processor to blend the ingredients. Add a small onion, 1/4 of a medium tomato, 1 teaspoon of tomato paste, and 1 teaspoon of pepper paste.

If you don't have pepper paste, substitute with 1.5 tablespoons of tomato puree and increase the amount of pepper powder.

Add 1 piece of ice to the mixture to prevent the blender from overheating.

Blend until you have a chunky mixture, then add 2 tablespoons of olive oil, 1 tablespoon of pomegranate molasses, and 1 tablespoon of ketchup.

Cut a lemon and squeeze 1 tablespoon of lemon juice into the mixture, saving the rest of the lemon for later use.

Combine the bulgur with the blended mixture, which should have expanded and softened.

Add 1/4 cup of peanuts for crunch, along with a pinch of black pepper, 2 pinches of salt, 1/2 teaspoon of cumin, 1 teaspoon of powdered red pepper, 1 teaspoon of cayenne pepper, 1 teaspoon of esot, and 1 teaspoon of sumac.

Grind the mixture again, pushing it down if necessary, and add 10 sprigs of parsley, using the stems as well.

If the mixture is too thick, add a bit of ice or cold water to help blend it.

Shape the mixture into small patties, wetting your hands to prevent sticking.

Let the patties rest for about 10 minutes to firm up.

Serve with sliced onions mixed with salt, sumac, and parsley, along with lemon, turnip, and lettuce.

For a taco twist, spread the mixture onto lavash or tortilla, adding toppings like taco chips, lettuce, cheese, onion, pickles, and red beans.
