1

Add 1.5 kg of fine bulgur into a large tray.

2

Peel 6 medium-sized dry onions and blend them in a mixer until smooth.

3

Place the mashed onions into a bowl of cold water, add a little salt, mix, and pour into a strainer.

4

Wash the onions in the strainer 4 times to reduce bitterness and smell.

5

Chop 6 large tomatoes in the mixer without washing them after chopping.

6

Add the chopped tomatoes to the tray with their juice.

7

Add 6 tablespoons of hot pepper paste to the mixture.

8

Add 7 tablespoons of tomato paste to the mixture.

9

Add 2 glasses of olive oil to the mixture, adjusting as needed later.

10

Add 1.5 tablespoons of cumin, 1.5 tablespoons of hot chili flakes, 7.5 tablespoons of roasted isot, a little garlic powder, dried mint, and 0.75 tablespoon of salt to the mixture.

11

Add 1 glass of pomegranate molasses and the juice of 3 lemons to the mixture.

12

Add a little special vinegar to the mixture for flavor.

13

Chop parsley and fresh onions and add them to the tray.

14

Mix all ingredients together.

15

Use a meat grinder to blend the mixture, passing it through the medium hold apparatus 5 times.

16

Cover the mixture to prevent drying and let it rest for half an hour.

17

Pass the mixture through the meat grinder 3 more times after resting.

18

Taste the mixture to check if the bulgur is soft and ready to serve.

19

Prepare wraps using thin lavash bread, adding raw meatballs, lettuce, and a drizzle of pomegranate molasses, then fold the sides inward to make a wrap.

20

Alternatively, serve on a plate with lettuce leaves underneath and shaped raw meatballs on top, drizzling with pomegranate molasses.
