Bring a pot of water to boil and add salt to season the noodles.
Add wavy noodles to the boiling water and cook for about 6 minutes until done.
Remove the noodles from the water and strain them without rinsing; optionally add a little oil to keep them separated.
Blanch bok choy in the boiling water for about 30 seconds, then strain and set aside with the noodles.
Chop 1 cup of Thai basil roughly and set aside.
Chop a couple of Thai chilies finely to avoid large pieces in the dish.
Mince garlic by smashing it with the side of a cleaver and chopping finely.
Chop shallots very finely to reduce pungency.
In a large mixing bowl, combine Thai basil, shallots, garlic, and chopped Thai chilies.
Add 1 tablespoon of red pepper powder to the bowl.
In a small pan over medium-low heat, add 2 to 3 tablespoons of cooking oil and heat until a piece of garlic dances in the oil.
Pour the hot oil over the ingredients in the mixing bowl to infuse the flavors.
Add 2 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce, 1 teaspoon of black vinegar, 1 to 2 teaspoons of roasted sesame oil, and some fresh lime juice to the bowl.
Mix the ingredients in the bowl thoroughly.
Add the cooked noodles to the bowl along with some chopped green onions and sesame seeds.
Using tongs or chopsticks, mix everything thoroughly to coat the noodles.
Optionally, add a pinch of sugar to balance flavors, but it's not necessary if the dark soy sauce is sweet enough.
Serve the noodles topped with homemade chili crisp, additional green onions, and sesame seeds.
