2 cloves fresh garlic
2 stalks scallion; chopped up
2 cups long grain white rice (washed)
1 can (15.5 ounces) pigeon peas
1 ½ cups or 1 can (13.5 ounces) coconut milk
2 ½ cups water
1 medium carrot; cut in rounds
3 sprigs fresh thyme
2 tablespoon butter
1-2 whole scotch bonnet peppers
Parsley (optional)
