Add 1 cup of warm water to a large mixing bowl.
Sprinkle 1 packet of active dry yeast and 1 teaspoon of sugar into the water and stir.
Let the mixture rest for 15 minutes until it starts to foam.
Add 1 cup of all-purpose flour and 1 tablespoon of olive oil to the bowl and stir until smooth.
Cover the bowl with a kitchen towel and let it rest for 15 minutes.
Add 2 more cups of all-purpose flour and 1 teaspoon of kosher salt to the bowl and mix until a sticky dough forms.
Cover the bowl with a kitchen towel and let the dough rest in a warm place for 30 minutes.
Gently fold the dough by lifting the edge and folding it towards the center, turning it 45° each time, for a total of four times.
Drizzle about 1 teaspoon of olive oil over the dough and rotate the bowl to coat it.
Cover the bowl with a kitchen towel and let it rest for about 1 hour until it almost doubles in size.
Dust a work surface with flour and transfer the dough onto it.
Knead the dough for about 30 to 40 seconds to shape it into a smooth ball.
Divide the dough into 8 equal pieces, each about 75 g.
Shape each piece into a ball and place them seam side down on the floured surface.
Cover the shaped dough with a kitchen towel and let them rest for 20 minutes.
Preheat the oven to 500°F and place a baking sheet upside down on the lowest rack.
Cut parchment paper into 8 pieces, each 6x8 inches.
Roll each dough ball into a 6-inch circle using a floured rolling pin, rotating as you go.
Let the rolled dough rest for 15 minutes on the parchment paper.
Transfer two rounds at a time onto the hot baking sheet with the parchment paper.
Bake for 2 and 1/2 minutes, then flip and bake for another 2 and 1/2 minutes until lightly golden brown.
